Which font new Urdu text uses

If the PDF has no Arabic (Nastaliq and Naskh) font at all, it asks before adding an open Noto font for those letters, and tells you it did. Arabic (Nastaliq and Naskh) is a shaped script, so each word is shaped with the full font before it is written, and the real letters are stored so the text stays searchable. Urdu is written right to left; the edited line keeps the direction of the text around it.
