Which font new Chinese text uses
First the font your PDF already uses for Chinese, even when only a few of its letters are embedded: MythosPDF loads the complete font and sets new letters in it. If the PDF has no Chinese characters (Simplified and Traditional) font at all, it asks before adding an open Noto font for those letters, and tells you it did.
